Bodyguard or Chef? My hellish week on a private jet with a family on the run.

People often imagine yachting as a structured, orderly world. But sometimes, you land contracts that surpass fiction.

It all began after the sinking of my first boat. My agency contacted me for an urgent replacement: an Italian family, based in Austria, was looking for a private Chef to follow them everywhere.

Arrival in the Imperial Suite

I arrived at a luxury hotel in Austria. The atmosphere was heavy. The boss greeted me in a white undershirt, surrounded by two hulking Italian bodyguards—his personal security. Next to them stood a terrified "Nanny" whose passport had been confiscated.

The deal? "You only cook for us. We don't eat anything from the hotel."

I settled in and started cooking pasta… when suddenly the butler knocked: "We leave in one hour."

Life Without Anchors

London, Melbourne, Munich… In one week, we changed countries every two days. No information, no flight plan.

We'd land, rush to the hotel, I'd commandeer a corner of the kitchen, serve the meal, and off we'd go again.

I quickly realized this wasn't a vacation.

It was a getaway.

The son refused to return to Italy; the family was living in hiding—and I was stuck in the middle, cooking pasta between takeoffs.

The 4 a.m. Escape

By the time we reached Malaga, the tension had become unbearable. I'm not a mercenary—I'm a chef.

One evening, I managed to retrieve my passport (a victory in itself). I didn't ask for my salary. I didn't say goodbye.

At 4 a.m., I slipped away quietly—straight to the airport, back to Cannes.

When I told my agent, Madame Uzet, she simply smiled: "You did the right thing by leaving."

The lesson for you:

In this profession, money flows freely—but your freedom and safety always come first. If something smells wrong, walk away. Yachting is a world of luxury, not a gilded prison.
